Emulator Problem: PS2 - Choppy FPS

Hi, I've used PS1 emulators in the past and I've always found them to be pretty straightforward and easy-to-use. This might be my first time trying a PS2 emulator (honestly don't remember). I'm trying the PCSX2.

So I loaded the game up and everything seems to be running fine, the PS2 intro goes through smoothly and then the game asks me to confirm my memory card. (Not actually my question for this thread but I suppose I do need to figure out what it means for a memory card to be 'unformatted' and how I might fix that)

I had to configure my controls at this point, it seemed to default to assuming that I'd be using a controller.

Once I got past the memory card selection I got to the main menu and here is where the FPS got super-choppy. My computer is a fairly high-tier gaming rig so I'm pretty sure that isn't my issue.

I think configuring the Graphics plugin might help but when I tried that I honestly have no idea what I'm doing.

Does anyone have any advice on what the best way to fix this would be?
