I'm very new to this so it might be a really simple question, however, is it possible to make these games run vertically? That way I would just mount the monitor (In this case an LCD) on it's side?

When the game loads, hit the TAB key, select Video Options, then Pixel Aspect, then rotate.

Great. Is there anyway to rotate the opening screen? That's still horizontal.

By opening screen do you mean the one displayed by mame before the game loads?. If that's the one you're talking about select the 'Skip Game-info' option from your settings or ini file, and mame will boot directly to the game. The 'Press OK' screen only appears the first time you run a particular rom.
