Not enough active people for something sustainable I'm afraid.
You do not need to have DS4windows running with retroarch. It will detect the controller as a dual shock 4 and use it properly.
I believe there was a problem with certain bluetooth adapters/drivers, I had similar problems when I tried myself.
I have not tried to WII Remote in a while so I am not sure of the status right...

This is not really an emulator problem, any app on Android devices or iphone/ipad could collect data. And the game publisher would be the least concern, the data could be sold to anyone. Be careful...

You need to change the aspect ratio to "widescreen" instead of 4:3 in the emulator settings. This may not work on all games.
You need to go to the settings and reconfigure the controls.
