With emulation use Intel and nothing else. I3/I5 but a I7 is just a waste of money for Emulation as that does nothing for you. Video cards are not all the big of a deal either as emulation is all CPU...
If you saved the game, just load it. Game saves are not the same thing, so it should be ok. Save states are bad, never use them. If you do increment as you go so you can fall back on them.

So my guess work was all correct, then I would focus on my advice.
That auto mapping should be done right and after its correct you should exit the emulator and it will save it.
A hacked Nintendo Switch is all you need for this. Get a Bliss-Box and retroarch, done. Take it anywhere, plug it in to any HDMI. I take mine on cruises.
