If you read the pcsx2 site, there are plenty of setup guides on configuring properly, and what specs you need to run certain games. The only 2 games I cannot play smoothly are Shadow of the Colossus, and Metal Gear Solid 3. But then again, I've yet to find someone who could.

It honestly sounds like you lack some serious processing power. I have a quad core 3.2ghz processor overclocked to 3.8ghz (only when I want to run my ps2 emulator). I don't recall if the ps2 emulator supports multi-core processing yet, but you'd almost need a 5ghz processor to play every game imaginable.
