I was wondering if such a thing existed...

A console built simply for running several different emulators for different consoles (mame, nes, snes, genesis, etc), where perhaps the games could be burned onto a CD or DVD. I love to play all the old favorites, but would much rather be sitting on the couch in front of the big screen than at the PC.

Any thing like this? I thought about buying a cheap old console like PSX, but there doesnt seem to be many emulators that exist.

AFAIK there isn't. Buy a Wii for the Virtual Console which let's you download a selection of NES, SNES, Genesis and TurboGrafx games for a fee.
Or just connect your video card to your PC and get a wireless controller for it. Some frontends also let you control the menu with a controller.

hmm, i guess the next best option would be to buy a cheap old console that can handle emulation...I'm thinking Dreamcast, are there any consoles that would be cheaper on Ebay that would handle emulation of NES/SNES/Gen/MAME?

I think the Dreamcast is your best choice. This is because this console doesn't need modding to be able to play burned discs.
